These are recipes using 100% nondairy VeganRella cheese
alternative, which is available in health food stores
throughout the U.S. and Canada. There are 2 flavors of
hard cheese style (Mexican and Italian), and 2 flavors of
cream cheese style (Plain and Onion&Dill). VeganRella does
NOT taste like cheese, but it tastes great anyway.
It does melt, however.

CindaRella Citrus Dip
8 oz. pkg. VeganRella Plain Cream Cheese
1/2 tsp. lime juice (or to taste)
1/3 cup orange juice concentrate, thawed
Place the Cream Cheese, concentrate and lime juice in blender
or food processor. Blend until smooth. Refrigerate.
Serve with assorted fresh fruit such as bananas, berries, apples,
peaches, grapes, etc.
Makes 1-1/3 cups.
Wizard's Chocolate Pudding
2-8 oz. pkgs. VeganRella Plain Cream Cheese
3/4 cup cocoa
10 oz. pkg. Mori-Nu Tofu, Firm style
1/4 tsp. salt
1 cup melted margarine
1-1/2 cups sugar or other sweetener
1/2 cup water or soy milk, as needed
Blend the tofu and cocoa very well, then pour into
a bowl and set aside. Blend well the other ingredients
using the liquid as needed. Pour into a bowl and mix in
well the tofu and cocoa. Try to make as thick a mixture as
possible so it will set nicely when refrigerated. Pour into
single or individual serving dishes and refrigerate for several hours.
Makes 6-8 servings.
Way Cool Vegetable Dip
1 cup VeganRella Plain Cream Cheese
14 oz. roasted red peppers
2 each chopped green onion
1-1/2 TBL. lemon juice
One clove garlic, pressed
Add to taste: onion or garlic powder, or herbs
Mix ingredients well. Serve with an assortment of cut fresh vegetables
or crackers.
Makes 3 cups.
Rella-tive Roll-Ups
1 package VeganRella Onion-Dill Cream Cheese
6 tortillas (6 to 8 inch)
Yves' Meatless Pepperoni slices
Optional: chopped black olives
Spread a layer (to taste) of Cream Cheese on each tortilla. Top with
the pepperoni and chopped olives. Roll up tightly. Wrap each roll
securely in plastic wrap. Refrigerate. Cut each roll into 6 pieces and
secure ends with toothpicks. Serve on a tray. Suggestions: Vary toppings
or use plain cream cheese and serve with a sauce.
Makes 36 servings.
Cheese Cake...Not!
Crust:
1 cup amaranth graham crackers
1/2 cup corn oil (or Spectrum Spread)
3/8 cup sugar, Sucanat, or other sweetener
Mix in food processor until crumbly. Press into a 9 inch pie pan.
Filling:
1 cup VeganRella Plain Cream Cheese
1/2 cup sugar, Sucanat, or other sweetener
1 tsp. vanilla
3 TBL. orange juice
Blend well in food processor (the filling will not be white). Pour into
pie pan and place on a baking sheet. Bake at 200 degrees for 30 minutes.
Cool. Way Cool!
Makes one 9 inch pie.
Rella Rella Nice Cheese Sauce
6 oz. TofuRella, Zero-FatRella or AlmondRella
4 TBL. butter, margarine, oil or alternative spread
4 TBL. flour
1/2 tsp. each: salt, pepper, dry mustard powder
1 cup any milk alternative
Grate or shred the Rella. Melt butter or margarine in a sauce pan and
whisk in flour, salt, pepper and mustard. Cook over low heat, stirring until
smooth and bubbly. Remove from heat, stir in milk. Heat to boiling, stirring
constantly for 1 minute. Add Rella and stir until melted and smooth.
Makes 2 cups of sauce.
Nacho-Nacho Sauce
8 oz. VeganRella Mexican flavor
1/4 cup water
Shred VeganRella. Combine ingredients in double boiler or crock pot and heat
until melted. Serve over chips. Garnish with your favorites topings, such as
olives, peppers, onions, tomatoes, etc.
Makes 1-1/4 cups.
Rapid Tortilla Wrap
Spicy Version: 2 oz. sliced VeganRella Mexican
Mild Version: 2 oz. sliced VeganRella Italian
Green and Red peppers, cut into strips
1 tortilla (6 to 8 inch)
Place the tortilla on a microwave-safe plate and microwave for 15
seconds to soften. Layer VeganRella on just half the tortilla (without
overlapping) and top with peppers. Fold tortilla in half. Cover and
microwave until VeganRella is soft and warm. Fold into quarters. Serve
with your favorite salsa, guacamole or non-dairy sour cream. Can also be
prepared in a regular oven.
Land of Rella Pizza
16 oz. VeganRella Mexican or Italian flavor
16 oz.pizza sauce
chopped vegetables of your choice
1 pre-baked pizza crust, medium size
Shred VeganRella. Spread sauce on crust, then sprinkle VeganRella and
vegetables. Cook according to crust directions.
Rella Good Gratin
6 oz. VeganRella, Mexican or Italian flavor
2 c. broccoli, steamed
3 c. brown rice, cooked
3/4 c. vegetable broth
1/2 c. green onion, chopped
1/4 c. cilantro, minced
2 TBL. Dijon mustard
1/4 tsp. pepper
Grate or shred the VeganRella. Mix ingredients well and spread evenly in
9x13 inch baking pan. Sprinkle with 1/4 c. fine bread crumbs mixed with
2 tsp. oil or butter. Bake at 350 degrees for 15 minutes. Serves 8.
CindaRella Spuds
4 oz. VeganRella, Mexican or Italian flavor
4 medium potatoes, scrubbed
1/2 c. green onions or chives, chopped
1/2 c. imitation bacon bits
Bake potatoes and let cool. Grate or shred Rella. Slice open potatoes.
Scoop out the inside and mix with remaining ingredients. Place the
potato filling back into the potato skins and sprinkle with imitation
bacon bits and Rella. Bake at 350 degrees F for 20 minutes. Serves 4.
